Lest We Forget

Today is a unique day. It's the day when two sovereign countries - Australia and New Zealand - share a national holiday and make reference to both countries in the name of that holiday.

Anzac Day. Australian and New Zealand Army Corps (ANZAC).

Anzac Day commemorates all Australians and New Zealanders killed in war and also honours returned servicemen and women. The date itself marks the anniversary of the landing of New Zealand and Australian soldiers – the Anzacs – on the Gallipoli Peninsula in 1915. The aim was to capture the Dardanelles, the gateway to the Bosphorus and the Black Sea. At the end of the campaign, Gallipoli was still held by its Turkish defenders and thousands had lost their lives.

In our family we remember not by attending Dawn Services but by making ANZAC Biscuits. I love these biscuits but since they're full of sugar I won't be eating them, but the boys will certainly enjoy them.

Here's our favourite recipe:



Anzac Biscuits

1 cup rolled oats
1 cup plain flour
1/2 teaspoon mixed spice
1 cup brown sugar, firmly packed
3/4 cup coconut
125 grams butter
2 tablespoons golden syrup
2 tablespoons water
1/2 tsp baking soda


Method
1. Combine oats, sifted flour and mixed spice, sugar and coconut together in a large bowl.

2. Melt the butter, golden syrup and water together. Stir over low heat, without boiling, until butter is melted. Bring to boil, remove from heat; stir in soda.

3. Add syrup to dry ingredients and mix well.

4. Spoon heaped teaspoonfuls of the mixture, 5cm apart onto greased trays. Flatten lightly with a fork.

4. Bake in a slow oven, 150 degrees Celsius for about 20 minutes or until lightly browned. Leave five minutes then loosen and transfer to a cake rack to cool. They will become crisp as they cool. Store in an airtight container. Makes approximately 50, depending on size.

For anyone wanting to try this recipe but not having access to golden syrup, honey, corn syrup or treacle can be substituted although the taste will be slightly different.

Wow those biscuits sound very good. So I guess that's kind of like Veteran's Day here.

Wow, that is a little bit of history I didn't know! We know almost nothing of Australia or New Zealand here.
